Thats because you are not paying attention to your steering input.
If you use shuffle steering you would have less "frantic" moments.
Once you've learned shuffle steering, (LHD car) when the steering input is done with the right hand, how left hand guides/slip or grip/hold the steering while it goes back to neutral position, you would have less frantic moments. Steering input style is your own.
I use 5 o'clock & 7 o'clock because Im lazy, lol. Sometimes I would pull up, sometimes I would pull down on the steering wheel.
Since both hands are working the wheels in hand-off concept it makes steering quick & precise.
This advise concept may not be easy to grasp but once you got it, you can make your car to a belly dance.
Auto is still slow compare to manual.
The reason is, auto has to go to specific rpm before gear change.
With Manual I can change gear anytime I feel like it.
Example: If you go into the corner, you hit the brake sometimes auto will not downshift til it reaches certain rpm.
In manual, sometimes I dont even brake just downshift & steering input & gas.
I use pedal/ service brake for weight transfer. When you're trying to go fast using too much brake can slow you down.
I use e-brake for lateral control.
There are techiques you can do to oversteer & understeer.
Both can be used to your advantages. Its about timing, when to do certain input.
